Zucchini Lasagna

Zucchini Lasagna

1 pound lean ground beef
1/4 cup chopped onion
1 can 15.oz tomato sauce
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
4 medium zucchini
3 tablespoons flour
1 cup low fat creamed cottage cheese
1 egg, beaten
1 cup(4oz) reduced fat shredded mozzarella cheese

Brown beef and onion;drain fat. Add tomato sauce and seasonings. Bring to a boil. reduce heat and simmer for 5 min.

Slice zucchini crosswize into 1/4 in slices.

Place half in a greased 12x8 pan. sprinkle with 1/2 the flour. Combine cottage cheese and egg; spoon over zucchini.Top with half the meat mixture. Repeat layer of zucchini and flour. Sprinkle with mozzarella cheese and remaining meat mixture.

Bake at 375 for 40 min.
