Recipe Review: Berry Cobbler

Last Friday, we invited some friends over for a spur of the moment game night. I knew that this was the perfect time to try making this Berry Cobbler. Not only is it easy, but I could also get some really honest feedback about the recipe. I am glad that my friends do not mind being guinea pigs for the sake of my blog!

I put this cobbler together in no time. It made my entire house smell wonderful. We ate dinner and finally dished up the cobbler with ice cream and it was a hit! Everyone enjoyed eating it! It is safe to say that this recipe is a keeper.

You will need three ingredients. That's it!

First spray your 9 x 13 pan with Pam. Then pour your berries into the pan.

Spread the berries out so that they are all evenly dispersed.

Add dry cake mix over the top. The recipe calls for a white cake mix, but all I had was french vanilla.


Pour soda slowly over cake mix.

DO NOT stir the cake mix and the pop - this will give you a 'crust'.

This is what your cobbler will look like before you put it in the oven.

Bake 350 for 45-50 min. This is what it looks like when it is finished.

I ate my Berry Cobbler with a 1/2 cup of No Sugar Added Blue Bell Country Vanilla ice cream.  It was so good!

Ingredients
Two 12-oz bags frozen mixed berries/peaches
1 box white cake mix
Approximately 1 can of diet 7-up or other clear soda 
(might need more than 1 can of soda to avoid dry spots) 

Instructions
Place frozen fruit in a 9x13 baking dish. Add dry cake mix over the top. Pour soda slowly over cake mix. DO NOT stir the cake mix and the soda  - this will give you a 'crust'. If you stir the two, you will have a cake like topping. 
 
Bake 350 for 45-50 min or longer until berries are cooked.

Oh I will be trying this for sure. I made Bubble up enchiladas last Friday and on Tuesday I made the recipe that was angel food cake with chocolate pudding (can't remember the name of it) for our small group. And it was a huge hit.

Oh this looks like the "healthier" version of dump cake (it uses pie filling instead and butter instead of sprite LOL). I will have to try it. And the bubble up enchiladas were great! Thanks for all the new ideas!

Quick question. The frozen fruit I'm buying comes in 16 oz bags. Is it two bags of fruit or 24 oz of fruit?

Megan - Yes. You need to make sure that the soda touches as much of the cake as possible.

In order to be Weight Watchers friendly, I would recommend diet soda. However, you do not have to use diet.

I love this!! Did however use regular pop, as I have hyperthyroid, so not to have artificial sweeteners. Rubarb would be very good in this also.

Anonymous - I am sure that you can make this with fresh fruit. I have not tried it myself, but I am pretty sure it would still turn out good.

Was the Diet Sprite a personal preference? Did you have any after taste from the artificial sweetener? I would rather use regular Sprite, if possible. Thanks for the recipe!

Earthbound and Up - I used diet Sprite so that it would be 4 pointsplus per serving. I do not like artificial sweeteners either and I was glad that this did not have an after taste. However, you can use regular Sprite if you prefer.

I used to be on w.w. a few years ago. I'm starting it up again, but I'm sticking with the old points, not points plus. Do you know how many calories, fat grams and dietary fiber in each serving? This looks delicious! I'm going to try it tonight!!

I just repinned this on my pinterest site. I can't wait to try it. I think I'm going to make it with sugar free white cake mix. I think it would be good with diet dr. pepper/chocolate sugar free cake mix and frozen black cherries. Yummm.

Definitely only add one can of soda I added 1 and a little over a half extra... It was good but it was a bath of fruit and berries lol

i don't do points. keep it simple..calories in and calories out. just plugged this in "my fitness pal" and it is 136 calories per serving.

i JUST made this but my cobbler came out really watery, there was a lot of liquid from the berries. I don't know what i could have possibly done wrong...

We have done this for years in many different ways. It is so easy that it is the first dessert my kids have each made, and they ask for it all the time! My recipie uses more fruit, so for those who asked for the size of the bags, don't worry. But keep in mind that will change your points values. Great with frozen peaches, amazing with frozen cherries. Have fun!

you should never heat diet drinks, the aspertain sweetener can't handle the heat and turns something not super wonderful for you into something really bad for you.

plug the nutritional value of each item into sites like myfitnesspal.com or something similar. Usually they can give you calories per serving size etc. if you have all the ingredients and amounts.

I made mine with 2 cans of strained pineapple bits, and it worked out great and everyone had seconds, I served mine with real whip crean from a squirt can!! Yummy!!!

I used to make one like this with angel food cake mix, canned pineapple, a sprinkle of flaked coconut & orange pop (a dollup of whip cream on top) Delish!

Yum! This was good. I had to cook mine about 50 min. The middle wasn't done. I used sprite and couple bags of mixed fruit. I think I am going to try it with fresh fruit next time. The bottom was kind of watery because of the fruit. It was pretty good though.

we just had this after dinner while it was still warm with sugarfree vanilla ice cream, it is yummy!!! my husband is a diabetic so i am always on the look out for a good tasting recipe he can enjoy, he loved this one.

Alright, I smudged things a bit. I used a 16 ounce bag of frozen strawberries, threw about 3 in each cup of a cupcake tray, sprinkled a little over a tablespoon of cake mix (also french vanilla lol) on top and did my best to cover the rest with Sprite. They're about 40 minutes in right now and I've had to pull them out to scrape the berry juice back into the cups a couple times so my oven doesn't get caked in it. It smells great, though! It has also baked down a little bit so it's not quite so overflowing. I think I'll follow the recipe next time so I'm not having to stare at the oven forever. :)

As with other posters I was not happy some parts of the cake mix remained powder. Unfortunately the amount of soda used and the way it is applied you cannot possibly get it all wet without mixing it up. SO...I cooked it for quite awhile then I took a turkey baster, squeezed up the juices from within the cobbler and squirted the juice over the powdered areas and threw it back in the oven until everything was cooked. I was very pleased with it once I made that small adjustment.

There are only two of us. So I use a smaller pan 1/2 a box cake mix and 1 of those small size soda's. Works good for singles and couples.

Made this today with some blackberries and raspberries I got really cheap a few months ago , added some Schwan's blueberries ; used 1/2 a yellow sugar free cake mix & unsweetened applesauce ( no diet pop in the house !) and it was FABULOUS! !!! I sprinkled a 2 packets of stevia on the fruit . thanks ! ( I saw it on pinterest also- you are very popular there !! )

I found this recipe on pinterest and was super excited to try it. It looks so delicious and I know my kids would love it. I tried it tonight. I followed the directions to the T and even had all the ingredients except I had white cake mix and when it was done it still had a lot of dry cake mix on top and it was really runny and just looked like mush. It didn't look like your end picture at all :( I was so upset. Any idea on what might have gone wrong?

I cooked this yesterday with a bag of frozen peaches, a bag of frozen raspberries, and sugar free yellow cake mix. I divided the final cobbler into 8 pieces and ended up with 233 calories per serving. I can't get enough of it! (Just warmed up a piece for breakfast, lol.) Thank you for posting!

I just made this tonight... It was awesome! Yes, it was runny, but the runny-ness was really really good. The juice was more of a syrup than just juice. I even "basted" the top a bit in the middle of baking with some of the juices from the bottom. I was afraid it would make the top too soggy but it didn't! there was plenty of crusty top :) The Syrup will be fantastic on ice cream.

This was great and so easy! About halfway through the baking I noticed much of it was still powdery so, I scanned the comments and noticed the one about getting ALL the cake mix moistened with the soda. I added another 1/3 can of soda and baked it a little longer. It still turned out to be super tasty!

I came across this on Pinterest and made it today. We love it! One of my new favorite desserts. I noticed in the pictures that it looked kind of powdery and I did not want that so I made sure to get all of the batter wet. I also had to wait for the oven to heat up so the soda had a chance to soak up some of it. I also left in the oven longer because I wanted a really crispy top. I all worked wonderfully! So delicious!

I love this recipe and have been making it for years. To avoid any "dry" areas I actually to mix the cake mix and can of diet pop in a bowl, then pour it over the frozen berries. Serve it with some FF whipped topping and it's th goods!

The triple-berry medley in the frozen section of Costco works well too.

I cut everything in half and baked it in an 8x8 pan... BIG mistake!Our adult twin sons dropped by and there was barely enough!

Mine was also quite watery, I'm gunna try 1/2 bag of frozen and 1/2 fresh fruit next time. I was also disappointed in all the dry spots, there was a lot!! Will try what a few people suggested in during baking use some juices from the bottom!!

Made this last night and absolutely LOVED it! Made it with frozen peaches instead of berries and it was delicious. Peaches were a little tart but with the sweet cake/sprite mix on top it balanced out. Going to try someone's tip of mixing sprite and cake mix together first before pouring over fruit to avoid "dry spots" but either way it was DELICIOUS!!!! :)

I don't know if anyone said this or not but try adding drained crushed pineapple along with the berries. Squeeze out the juice too. Diet Mt Dew & sugar free Pilsbury yellow cake mix work great too.

I adore this recipe. We call it dump cake.

you should all stop drinking diet soda with aspartame in it!!! Switch to Zevia soda. I buy it at Whole Foods. It's sweetened with stevia and is much healthier!! Comes in lots of flavors, just like real soda. Will try this recipe with it soon!

This actually wasn't that special for us. Used frozen strawberries and blueberries, vanilla cake mix from Trader Joe's and Sprite. Not bad, just not worth making again. Wished I'd sprinkled raw sugar on top. Oh well.

I used 1 1/2 packages of with pudding cake mix, a 16 oz bottle of diet siera mist and a gallon ziploc bag of blueberries and blackberries mixed together and frozen. I did mix the batter and soda into the berries. It is amazing! I did have to bake it for an hour. Glad I found it on Pintrest.

Anonymous - I do not think water or apple juice would work, because you need the carbonation from soda to make the cake bake correctly.

Cooking with aspartame (aka Nutrasweet) is dangerous! When heated it breaks down into it's core components, so of which becomes formaldehyde! I appreciate the idea, but this is one food that you should make sure the soda pop you are using is made with sucralose (aka splenda) or Stevia, or stick with sugar. I too am losing weight, and even eating real sugar it can be done!

I agree with many of the posters regarding the use of the diet soda and the cooking dangers. YIKES! Based on the amount of sugar that's probably in the cake mix and the naturally sweet fruit, why not use club soda like LaCroix Berry or Canfield's Berry? We can get by with much less "sweet" in our diets.

Made this tonite.....had to bake it for abt 55 mins & basically poked the unwet cake mix through out the baking process so it wld all cook...it just made the cake get more into the berries & made it better...& let it set for abt 15 -20 mins where its more formed & not as runny. End result delicious!!!!! U may have to tweak the recipe & time to suit u but its an easy & excellent dessert...will def make again with dif fruits..YUMMY!!

I'm having difficulties with this one. I had it in for time stated then scooped some up and powder all through it and my strawberries were still cold so I mixed it up and put it back in. It's been in for another 1/2 hr and doesn't look ready yet so I think I am going to give it the 50 mins that I saw in some comments. What I did taste was awesome though so I really hope I can get it to turn out

I wanted to try the cake mix diet soda recipe so ... I used spice cake & diet Vernors. I worried about what folks had said about the aspartame but after looking it up and reading about it I was ok it only loses it's sweetness when heated nothing toxic happens. I blended the cake mix with the Vernors and added a 1/2 teaspoon of apple pie or pumpkin pie spice to add to the sweetness, no sugar. Used baking spray on a mini muffin tin measured out a rounded tablespoon measring sppon in each hole and baked for 8 minutes at 350. It made 43 muffin cakes and tastes AWESOME! The cake mix dry is 1600 calories divide that by 43 and you have 37 calories a muffin cake. Next time I am going to try to add flax and or wheat germ to make it a bit healthier. But these are a winner! Thanks for the idea!

Yeah I looked it up too, and it seems it's only one crazy doctor who made those claims. Like others have said, if this were true, there would be warning labels even though most people don't bake their soda.

If you sift the cake mix and use a measuring cup with a small pour spout to disperse the soda, you won't have the dry pockets of cake mix!

I made this for the first time this morning for a potluck at work, and everyone loved it! I used frozen peaches, a yellow cake mix WITH pudding, and Walmart brand diet lemon lime soda. I saw questions regarding the pudding in the cake mix, and I wanted to let everyone know that mine turned out just fine. I baked it for 55 minutes, and it still had the nice cobbler texture. I also used a small measuring cup to pour my diet soda, and I used 1 3/4 cups instead of the 1 1/2 cup (12 oz can). I had just a few powdery spots left after baking, so to hide it I sprinkled powder sugar over the top. Looked great and tasted delicious! Thanks for sharing the recipe!

Made this tonight using Fresca Citrus zero calorie soda. Only had white cake mix with pudding and used probably a little too much fruit. Still VERY good!

Made this today! ( I'm sick) so fast and easy prep was amazing! Instead of Sprite or 7-Up I used a fruity sparkling soda that's like Sprite but with berries. It's also a bottle instead of a can so I measured it with my eye. It's in the oven now and looking/ smelling fantastic! :) thanks.

I made this and it was delicious. I did mix the 7-up with the cake mix, before pouring onto the fruit. And it does make a 'cakey' top. Just so easy. A huge hit at our house. Thank you.

That's what I did - added some extra sprite once I realizes it wasn't all dissolved. Worked great and served w/ a spoonful of cool whip. Used fresh blueberries and nectarines.

I just made this using Yellow cake mix and frozen peaches....DELICIOUS! I added a little bit more soda on top for most of the cake mix bake. I put it in the oven for 50 minutes, and the peaches made the most perfect glaze sauce! Absolutely trying this again for every party that I go to! Thanks for the recipe!

So excited! In the oven now! I hope it turns out well. I love Pinterest for all the great recipes!! I should have read the comments first, but oh well! Mixed frozen berries, french vanilla cake (pudding in the mix), diet 7up. The family will be testing it tomorrow! Peaches next time!

I used a can as well but it turned out like berry soup. I see others had this issue as well. Shame..it tasted good but its impossible to serve it that runny

Anonymous - It's hard to say how many calories are in 1 pointsplus values. I believe it's about 35 calories, but it depends. So, 4 pointsplus would be about 140 calories. Like I said I do not know for sure, this is just an estimate.

Anonymous - The soda is what cooks the cake mix. You could try milk or water, but I do not think it would work like it is supposed to.

For those who don't like or cannot use artificial sweeteners (I personally avoid them because a lot of people in my family have had cancer, so I'd rather not risk it), I have used a couple of different soft drinks sweetened with Stevia. One is called Zevia and I believe you can get it at most natural food stores and some grocery stores. The other was partially sweetened with fruit juice and cane sugar, and partially with Stevia. I believe it was called Refreshers and they are at Safeway. They are a Safeway product and only have about 60 calories each. Also, since the cake mix is already sweet, I am experimenting with using some bubbly water. I wanted more moisture to avoid the crumbs on top, so I used a whole Black Cherry Zevia and half of a lemon flavored bubbly water (all I had on hand). I love this recipe! I used fresh organic blackberries the first time with an apple flavored cake mix and an orange Refresher and it was awesome! This time I am using mixed frozen berries and yellow cake mix. We shall see how it turns out!

I just tried it and it turned out great. I used frozen peaches. There was some frost on the peaches so a rinsed that off to avoid any extra wateriness. I also drizzled the Sprite very slowly over the cake mix and that helped cover most of it up and avoided the dry spots.

I tired this a few weeks back and we are having it again tonight! I did mix it with a fork and we found it a bit runny but that didn't stop us from eating it all! Tonight I used some soda water as well as the Sprite! Thank you so much for posting this super-easy dessert! Way to go on leaning on the Lord and losing so much weight too! What a testimony!

My sister made this with butter pecan cake and frozen rhubarb and though it seemed a curious combination at the time, it was absolutely spectacular.
It was even a hit with my dad who despises rhubarb. ;)

Delicious. So much better than the 'old' dump cake with a can of pie filling and cube of butter. The 24 oz. of Schwahns mixed berries made a perfect filling. Used your recipe without reading comments and if was perfect. Yeas, there were a few dry spots because I pured too fast. I just stirred them in when I served it. Thanks for sharing.

I made this diabetic friendly with a sugar free vanilla cake mix. I mixed the cake mix, soda and berries all together before putting it in the pan and it came out great. It was more of a cake than cobbler, but still yummy!

I know this has been out for over a year but thanks to Pintrest I just found it. I love this idea, and will make it soon. We have a large family with several people who are either diabetic or borderline. Because of this we are always looking for ways to "spice up" food that otherwise gets boring. I agree with the poster who suggested mixing the soda and mix before putting it on top of the berries. It may clump a little because that's what liquids do to cake mixes, but biscuit mix would be lumped on anyway.

And to ask, has anyone tried to use seltzer water and a (kool-aid) drink flavor (lemon, lime, etc) instead of soda? I wonder if it would work, especially for those who don't like artificial sweeteners.

Thanks for sharing your time and your life. I can't wait to try out this and all your other recipes.

Saw it and made it within 10 mins. Everyone waited anxiously for the timer to go off - needed 10 extra mins. but well worth the wait. It is not meant to be a cake to cut into slices, but more of a cobbler. YUM! I did Pink Strawberry Cake mix, one bag of strawberries was all I had, and a can of Sprite....Delish!!!!

Just made this for my husbands birthday (he didn't want an actual cake) but i made it with blueberry pie filling because that's what I had in the house on short notice. Turned out great. I did have some small powder pockets, but didn't mind those at all. If you've ever made cobbler in a dutch oven, you will always have some of those. We've always made a similar recipe, but this recipe was a perfect substitute for the way we usually make it in a dutch oven. And the seven up we used made up for not using butter that is usually in cobbler recipes, which added a great flavor. I will be making again. Next time we'll try frozen fruit. Thanks for such a great recipe!

I used a can of pineapple and a can of peaches with snicker-doodle cookie mix and just put the cinnamon mix on top...
but I don't have any soda, only cola. I'm not sure how good it would be with cola, so I used raspberry lemonade and tried to find something with bubbles in it, so I used a bit of Riesling wine. Do y'all think that will work? I just put it in the oven.

I made this late last night. Turned out great, however I was letting it cool before I put it in refrigera,tor. This morning I found it out. I forgot to store it in fridge. I did have a lid on it ... should I throw it out? I put it away.my thoughts were that the preservatives in the ingrediants surely saved it overnight. What is your opinion.

For those that didn't like the small amount of white powder on top. Pampered chef sells a small spray bottle, I think called a kitchen spritzer? It can be used with oil, juice etc. We had one sitting in the pantry so after poring the 12oz of liquid over the top of the berries I added a little of the sprite into the bottle and spritzed over all the dry spots. It worked PERFECTLY!!!!!!
