Like many of my recipes, I found this one on the Weight Watchers message boards. It was a recipe that was always re-posted by other people. I knew it had to be good if people were always recommending it!
The ingredients you will need are refrigerator biscuits, shredded cheese, enchilada sauce, tomato sauce, and ground turkey or lean ground beef. |
After, stirring in the tomato sauce, I then added the enchilada sauce and mixed all of that together. |
Take your refrigerator biscuits out of the container and cut each biscuit into 4 pieces. |
Once you have finished cutting the refrigerator biscuits into quarters, add them to the meat mixture. |
Stir everything together before putting it in your pan. |
Add the meat mixture to the pan and bake for 25 minutes. |
When the first timer goes off, add your shredded cheese to the top and put it back in the oven for another 10 minutes. |

Bubble Up Enchilada

Ingredients
1 pound ground turkey
1 (10 ounce) can enchilada sauce
1 (8 ounce) can tomato sauce
1 can reduced fat refrigerator biscuits
1 ¼ cups shredded low fat Mexican Cheese
Instructions
Preheat oven to 350 degrees. Brown turkey and drain if needed. Mix in a can of enchilada sauce and tomato sauce. Cut the refrigerated biscuits into fourths and stir them in the meat mixture. Then you just dump it all in a greased casserole and bake for 25 minutes. Take out of oven and sprinkle cheese on top. Bake an additional 10 minutes. Let stand for 5 minutes before serving.
You can make this into 6 or 8 servings.
Serves 8 = 5 Points Plus+
Serves 6 = 7 Points Plus+

I copied this down before but haven't gotten around to trying it yet. Maybe I'll put this on the menu for tomorrow. I have a lot of recipes in my box from you. I guess it's time I start doing something productive with them. Thanks for the time you take to give such great ideas. I'm worthless in the kitchen (well - next to worthless but not completely, I guess), so I appreciate all the great ideas.

Loved it!! My picky 11 yr old son even ate it. Super easy to make.
What am I doing wrong? Some of my biscuits are totally raw no matter how long I cook for.
The Richards - I am sorry that the recipe isn't coming out correctly for you. Unfortunately, I have not had that happen to me before. Have you tried cooking it for a little long?
While that looks so very yummy, I am going to guess the sodium content is through the roof! :( Congrats on your weight loss, you look fabulous...you were beautiful before as well, but I know how hard it is when you yourself do not feel happy with the weight. I am on the journey too!

I'm not a huge fan of ground turkey. Do you happen to have any idea how the points would change if I used extra-lean ground beef instead of the turkey? Thanks!
Just made this for my family tonight and they loved it. This will definitely be added to my dinner rotation. My 3 year old son loved helping me cook it and being able to see the step-by-step photos.
