Baked Oatmeal

Baked Oatmeal

Ingredients
2 cup uncooked oatmeal (quick or old fashioned)
1 1/2 tsp baking powder
1/2 tsp salt
1 cup fat-free skim milk
1/2 cup Egg Beaters or 2 eggs
1/2 cup unsweetened applesauce ( I do an unpeeled apple in the food processor. I like the chunky texture)
1/4 cup Splenda ( I added more- 1/2C)
1 tsp vanilla extract
1 tsp ground cinnamon ( I add more at least 1T or use apple pie spice)

Instructions
Preheat oven to 350* Combine wet ingredients and add dry ingredients. Bake in sprayed 8" square pan for 35-45 minutes.

Also good with 1 mashed banana, pumpkin etc instead of the apple. My favorite is banana and add either 1 pkg dry s/f choc or banana instant pudding mix. Eliminate cinnamon with choc. I also eliminate salt when using pudding mix. Keeps well in refrig. Or freezer. It's good cold or warm.

Serves 6; 4 pointsplus+

I made this for breakfast this morning. It was really good. I used pumpkin, brown sugar Splenda instead of regular Splenda and pumpkin pie spice instead of just cinnamon. :)

I have made this using just bananas-no pudding it was ok so am thinking it needs the pudding. I also made it using cinnamon applesauce and that was really great. My 7 yr old is in love with the baked oatmeal. Thanks

I have made this with bananas (no pudding) and with applesauce. Both were good but not sure what happened as the banana one ( i mad eit first) was really solid and more like a bar, once you put milk on it you could cut it up nicely.
My 7 yr old really loves this recipe and it is simple and for the most part quick.
