Recipe Review: Easy Beef Enchiladas

My husband is not normally a picky eater, except for when it comes to one things...mayo. Anything that looks of taste like mayo he will not eat. I have several enchilada recipes that call for sour cream, but since I have been married to Jon I have not made them. For the past several years I have been on the hunt for a good enchilada recipe that does not call for sour cream.

I found this recipe on an Old El Paso enchilada sauce can. The first time I made it we feel in love with it! It does not have sour cream and it was very easy to change the recipe to make it more points friendly.

Here is the recipe for Easy Beef Enchiladas.

I use 98% lean ground beef, Weight Watchers shredded cheese, and Mission Carb Balance tortillas. I usually make two pans of enchiladas. One is with my lower point ingredients and the other slightly more generous with cheese and regular tortillas. Sometimes I add a cup of cooked rice the the meat mixture to make it go farther



This really is a very easy recipe and can be prepared in just minutes.



This top pan are Jon's and the bottom pan are my Weight Watchers friendly enchiladas.



The finished product! We always have leftovers which I love, because then I do not have to cook everyday of the week. Enjoy!!

3rd Annual Lose for Good Campaign


The third annual Lose for Good campaign is kicking off today!! The pounds you lose from September 6 to October 23, 2010 can help feed children and families in need. Take the time to check it out at the Lose for Good website.

Last year, I really did not have any weight to lose, because I was so close to goal. Instead of donating food to match my weekly weight loss, I was able to give food that matched the total weight I had lost on Weight Watchers. I was so excited to bring 90 pounds worth of food, that was being donated to a local food bank.

If you are on the Weight Watchers program and have never had the opportunity to participate in this campaign I would encourage you to do so. It is an honor to be able to give back and be able to help those in need.


Oh! Weight Watchers is now offering really cute t-shirts online and all the net proceeds go towards the two world hunger organizations we are promoting Share Our Strength and Action Against Hunger.

Cake Mix Chip Cookies

Cake Mix Chip Cookies

Ingredients
1 box white, yellow, or chocolate cake mix
1/2 c butter or margarine
2 eggs, beaten
1 tsp. vanilla
1 c semi-sweet chocolate chips

Instructions
Mix cake mix, butter, eggs and vanilla until smooth. Stir in chips. Drop by teaspoon onto an ungreased cookie sheet. Bake at 350 degrees for 10-12 minutes.

*Use a melon baller to scoop dough and make perfectly shaped cookies.

Serves: 40

Celebrating My Followers!!

Yesterday, I reached over 100 followers for my blog. Yay!!



Today is about celebrating YOU my followers!


I just wanted to take the time to express my gratitude to those of you who read and follow my blog. I started out with the desire to share what I had learned on my weight loss journey with others. I had no idea how incredibly blessed I would be by the people I have met since starting my blog. I truly love blogging and it's even better when I have people that enjoy reading what I have to say.

Flashback Friday: My Biggest Loser Reveal

I knew what I wanted to tell you about this week for my Flashback Friday blog post. However, after my Wordless Wednesday pictures that all changed. Wednesday I went searching through my blog for a video I was sure I had posted last year. I could have sworn that I posted this on my blog after I filmed it, but I guess not. So, I have moved things around and decided that this video would serve as my Flashback today.

I love The Biggest Loser. When I started losing weight I decided that I needed to keep a pair of my fat pants. I showed you those pants in my most recent Wordless Wednesday post, if you missed it go check them out. I kept those pants, because I to be able to remember where I have come from. Just a few months ago I was able to fit into those pants with my sister in law! Can you believe that those pants used to be tight on me?

Another reason I kept my fat pants, is that I wanted to be able to film my very own biggest loser reveal video. You know what I'm talking about right? Someone gets kicked off the show and the very last thing they show is a video of that person and where they are today. At the very end the always have a pair of their old pants and they drop them to the floor revealing their new slimmer self.

So naturally after I reached Lifetime with Weight Watchers last November 2009, I filmed my very own Biggest Loser reveal. I know I'm weird, but that really is one thing that I was very excited to do after reaching my goal. Enjoy!!

Sheri's Inspiring Weight Loss

I have been told by many people that I am an inspiration. It is truly humbling to have someone describe you in that way. Today, I would like you to meet one of my inspirations.

I met Sheri718 recently on the Weight Watchers message boards. I was immediately moved by her weight loss journey. All it took was one look at her pictures to realize that she is a true inspiration! She has stuck with the Weight Watchers program and lost 200.4 pounds, in 2 years, 10 months, and 15 days.
