Berry Cobbler News and Tips

Good Morning!! I hope that you all had a wonderful weekend.

I am so excited about the recent interest in my Berry Cobbler recipe. If you have not tried this recipe, click here to check it out. This is such an easy recipe to put together and only requires three ingredients!

Ingredients for my Berry Cobbler recipe

Thank you to all of you who have taken time to comment on my Recipe Review: Berry Cobbler blog post. I love hearing about how much you enjoy this recipe and ways that you have adapted it to work better for yourself and your family!

A common issue for many of us, is that we have had problems with dry/powdery areas. Look at the picture below to see what I am talking about, because I had this problem the first time I made this too.

Berry Cobbler with some dry areas.
Thankfully, an Anonymous commenter shared an idea with me that I could not resist sharing with all of you. They said, "I love this recipe and have been making it for years. To avoid any "dry" areas I actually to mix the cake mix and can of diet pop in a bowl, then pour it over the frozen berries. Serve it with some FF whipped topping and it's the goods!"

Thank you so much Anonymous for the wonderful tip! The next time I make this, I am going to take this advice and mix the cake mix and can of diet pop in a bowl, then pour it over the frozen berries! I hope you find this comment as helpful as I did! Hopefully, from now on we can avoid those dry spots that bother us so much!

There is some other exciting news about my Berry Cobbler recipe. Last week, I found out that It Sux To Be Fat wrote a blog post called, Berry-licious Cobbler - Recipe about my Berry Cobbler recipe. I have never had anyone use my recipe in a blog post other than me. However, I thought it was really exciting!

Finally, this weekend, I got some exciting news via Twitter. Melissa who writes the Weight Watchers Daily, shared with me that my Berry Cobbler recipe was in the most current edition!! It is so exciting to be able to share with recipe with so many people!

I hope that you all continue to enjoy this recipe!!

This is an ideal recipe for our family - we have several with lactose intolerance and I am always looking for ways to give them/us a special treat. I serve with Breyers lactose free ice cream.

Always looking for treats for our lactose free family members - this comes pretty close. Servce with Breyers lactose free ice cream - so much better than the rice and soy products. Available at Walmart.

I tried mixing it in a bowl first and then pouring over fruit. It was very tasty but more like a cake consistency. Is that how it is supposed to be?

Jennie - If you mix the dry cake mix with the soda before putting it on top of your berries, it will taste more cake like.

I'm making this right now as I type. My house smells amazing as I'm using Betty Crocker's strawberry cake mix with the frozen mixed berries. I'll let you know how it turns out!

what happens if you use a cake mix with the pudding in it?

Unknown said...

What if you just take a silicone spatula and spread the soda over all of the dry areas before putting it in the oven instead of mixing it?

My cobbler was extremely watery...any timps on how to cut down on the amount of liquid...did I cook it too long and the berries liquified?

Jen Newsham said...

Anonymous - It should work just fine with the cake mix with pudding.

Monica Hewitt - That should work, you just don't want to mix it, because it will become more cake like.

Anonymous - I don't think you can cook the berries for too long. You might try making it with half fresh berries and half frozen berries.

does this need to be stored in the fridge?

I made this last night and wow was it good. A little powder was left on the top so next time I am going to mix the cake mix and soda together first. I covered it and put in fridge to prevent the little fruit flies from getting at it. Served it with ice cream and I can wait to make another one. I want to try it with peaches next. I used a french vanilla cake mix and found it a bit sweet, so I will try plain white cake mix. I give this recipe a "thumbs up " !!!

I am making this right now for Thanksgiving. I read the tip about mixing the soda and the cake mix AFTER I put it in the oven, so five minutes after, I pulled it out and mixed it on top of the berries with a little juice mixing in. Sounds like you can't really screw it up, so we'll see how it goes in about half an hour. Am going to be serving it with Cool-whip.

Awww,, no mine is super watery, and after only 35 minutes too, can't figure out why, I'm in England though, perhaps our cake mix packs are different sizes?

I used yellow cake mix, and added
1 1/2 cans of no sugar added peaches, along with the frozen fruit. Using the peach juice along with the pop to pour on top of cake mix. I let it cool a bit so it would thicken up more. I also used light coolwhip for topping. Very delicious!

Do the leftovers need to be refrigerated afterwards?

Getting ready to try this right now. After reading comments I've decided to try a hybrid for the topping. Gonna mix 2/3 of the cake mix with the soda, then use 1/3 dry to sprinkle over the top before baking. maybe the best of both worlds? We'll see. :)

I made this the traditional way, but after baking it 50 minutes I took the cobbler out and sprayed the top with butter Pam. Then I broiled the top until nice and brown.

After baking this for 50 minutes I took it out of the oven and turned it on broil. Then I sprayed the top with butter Pam and put it back under the broiler until nice and golden.

Do you know if it would work with gluten free cake mix?

Made this yummy cobbler and it’s gone in a night. My entire family loves it. I used Walmart’s cherry berry frozen fruit and it’s to die for!
