Recipe Review: Fiber One Haystacks

I really enjoy baking for the holidays. It is the perfect time of year to break out all of our favorite recipes to give away to others. I usually bake a combination of Weight Watchers friendly recipes and our family's favorites.

A few years ago, I found this recipe for Fiber One Haystacks on the Weight Watchers message boards. It is quick & easy with very few ingredients. It is a fun recipe, because you can choose to make chocolate or butterscotch. The possibilities are endless, just be sure to adjust your PointsPlus+ accordingly.

Here are the ingredients. Like I said you can change the flavor of morsels based on your mood and/or taste buds! This time I made them with butterscotch, because many of my other cookies had chocolate in them. This provides so different flavors.

First, put the morsels and peanut butter in a microwaveable bowl.

Microwave to melt according to the instructions on the package.

Microwave until all of the morsels have lost their shape and are smooth.

Then stir in one envelope of Fiber One cereal.

Move quickly to spoon out the haystacks onto wax paper.

Let them cool, set, and enjoy!!

I would die for some Fiber One cereal right now! I've been living in France since August and haven't been able to find this amazing, delicious wonder food! I fell in love with Fiber One after buying Hungry Girl and have enjoyed it ever since! Your haystacks look totally yummy :) Wish I could find all of the ingredients to make them!

I dislike peanut butter, but love the idea of a quick fiber one snack like haystacks. Can I sub something other than peanut butter?

Pooter - I would substitute a low calorie butter or margarine.
