Recipe Review: "Labor Inducing" Gingersnap Cookies

A while back I was asking my friends to give me some good ideas about how to induce my labor. One of my friends, Meagan, suggested that I try making these "Labor Inducing" Gingersnap Cookies. I found the recipe on Pinterest. I decided to put this recipe into the Weight Watchers recipe builder to see how many points+ per cookies. To my suprise these are only 1 points+ per cookie!

Even though these cookies did not induce my labor, I am glad that I found a great new low points+ treat!

The Ingredients

Combine flour, baking soda, cinnamon, ginger, cloves, salt and cayenne pepper in small mixing bowl.  Set dry ingredients aside.

Then blend margarine in large mixing bowl. Stir in brown sugar and granulated sugar slowly.

Add the molasses, then the egg whites. Finally, add the dry ingredients to your mix.

Roll dough into ¾ inch balls. Roll cookie balls in sugar to lightly coat each cookie.  Place balls on cookie sheet lined with parchment paper.

Bake in oven for 8-10 minutes or until cookies are golden brown.

Servings: 60 cookies
Serving Size: 1 cookie
Calories: 66
Fat: 1.6 g
Fiber: 0.2 g
Protein: 0.7 g
Old Points: 1 pt
Points+: 1 pts+

2 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
3/4 teaspoon cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
8 tablespoons (or 1 stick) margarine
1/2 cup granulated sugar (will also need extra sugar to roll cookie dough in)
1 cup light brown sugar, packed
1/3 cup molasses
2 egg whites

Preheat oven to 350 degrees. 

 Combine flour, baking soda, cinnamon, ginger, cloves, salt and cayenne pepper in small mixing bowl. Set dry ingredients aside.

Happy Due Date!!

I cannot believe that today is my due date!! After nine long months is waiting, this day is finally here!! Everything up until this point has been looking toward this day. I did not sleep well last night, because I kept wondering if I would go into labor in the middle of the night.

I tried explaining to Jon that this is worse than Christmas Eve! I mean at least at Christmas you know the day that it will come on December 25th. Christmas day never changes; however waiting for a little baby is very different. For all I know she could wait two more weeks before she decides to come.

All a long the way I have talked about having an attitude of patience. Up until this point in time, I have done really well. However, in these days following my due date, when I am officially "late", I am going to have to act out the patience that I have been talking about for months. I have talked the talk, but now is the time where I am given the opportunity to live it out.

Above everything else, I want God to be honored through my pregnancy, labor, and delivery. I want to be able to explain to those around me that the peace and patience I have at this time is from Christ alone! This is not something that I could manufactor on my own.

As for my pregnancy, things are going really well! Yesterday, my doctor checked my amniotic fluid levels by doing an ultrasound. It was so cool to see how big Olivia is now compared to when I last saw her at 17 weeks! I will go back to see the doctor again on Thursday. At that appointment, he will take time to check my fluid levels to see how Olivia is holding up in there. My prayer is that everything will continue to go well!

In the meantime, I have been working on getting all of the final touches ready for Olivia!! Here are some pictures of Olivia's things on her wall in our bedroom.

Don't Throw In The Towel


No baby yet! Sorry for the lack of blogging recently! I only have one week left until my due date and things are busy, busy, busy!

This morning, I finally had time to sit down and answer some emails from my blog readers/followers. I am so thankful that I took the time to do this, because it gave me inspiration for my blog post today!!

Today, I want to try and offer each of you some encouragement!! I receive emails on a regular basis from men and women who are trying to lose weight. I am so thankful for your willingness to be open and vulnerable about your struggles to lose weight. I appreciate your transparency so much!!

A pattern I’ve notice is that many of you begin your weight loss journeys and then within a month or two you are so discouraged that you already want to quit! Why are you so quick to throw in the towel? It’s so hard to read emails like this, because I know that if you stick with your weight loss program you will be successful. I know what it feels like when you don’t think you are getting anywhere, but I do not think that’s a reason to give up.

Below are three different ideas that you can try if you experience discouragement along your weight loss journey. These things helped me so much in my own journey and I know that they will work for you too!

First, you need to adjust your expectations. Healthy, long-term weight loss is slow. I know that none of you want to hear this, but it is true. You did not put on your weight in one night and you won’t be able to take it off that quickly either. If you are coming into your weight loss journey thinking that you will lose 4-5 pounds per week, you need to readjust your expectations so that you can avoid discouragement. Take time to create healthy and realistic expectations for yourself!

Second, celebrate EVERY victory, no matter how small you think it is!! You must being to change your mindset if you are going to be successful in your weight loss journey. A loss on the scale is a loss…period. I have heard from you all in emails and from my own Weight Watchers members that they, “only” lost 0.2 pounds. I know that you get frustrated that you did not lose more weight. However, please remember that loss is a loss. All of those 0.2’s and 0.3’s eventually begin to add up to whole pound! Change your attitude and begin to be thankful for those small amounts of weight that you lost, knowing that eventually it will add up to something bigger.

Finally, do not give up. You must keep persevering! You are worth it, no matter how much time it takes to lose weight! You need to become committed to your weight loss journey no matter what! Do not believe lies about yourself that you cannot do this, because it’s not true! It takes 21 days to make something a habit in your life. That’s quite a bit of time! Be patient while you learn to undo a lifetime of bad food choices. This was so important for me while I was losing weight in 2008-09, because I did not care how long my journey would take me. It didn’t matter, because I had already decided that I would be on Weight Watchers no matter how long it took me to get my weight off. Are you truly committed to your weight loss journey?

It is okay to be frustrated, especially when you are following the program and it does not seem to be working the way you thought they would. Just don’t let your frustration lead you to quit your weight loss journey, before it has really begun!

My Last Week with Weight Watchers

This is the last week that I will work for Weight Watchers before Olivia is born! I will work my normal Tuesday night and Saturday morning meetings and then I will be on maternity leave. I will be on maternity leave for about eight weeks or more, depending on how my labor, delivery, and recovery go over the next several weeks.

There is no doubt about it that I cannot wait to meet Olivia and welcome her into this world! However, this time is bittersweet, because of how much I am going to miss working for Weight Watchers over these next few weeks. Below, I have listed out the two main groups of people that I am going to miss while I am away.

{Weight Watchers Members}
First of all, I am going to miss my Weight Watches memebers. I enjoy being able to see my Weight Watchers members on a weekly basis. It gives me an opportunity to connect with them and find out how their weight loss journey is going. This past weekend I realized that I am going to miss celebrating milestones with my members while I am gone. I will miss being there for 5%, 10%, 5 pound stars, and much more!

I am excited to see how much progress my members are going to make while I am gone. I cannot wait to come back and hear all about their victories and struggles while I was away!!

{Weight Watchers Coworkers}

Next, I am going to miss my Weight Watches coworkers/friends!! It is such a joy to be able to work with other women who have been successful on the Weight Watchers program. I am going to miss the weekly encouragement that I receive from them throughout the week. It is going to be hard to not work with them for the next eight week!

I plan to take Olivia to Weight Watchers to meet my members and coworkers. I will be sure to take pictures and post them, so that you can share in Olivia's first trip to Weight Watchers. I know that it won't be her last.

Adding Nutritional Facts

For a while now I have been receiving emails and comments from readers asking me if I would be willing to post nutritional facts, instead of just the pointsplus values, on the recipes on my blog. Up until yesterday, I have been putting it off and telling people that I am not willing to do that at this time. I knew what a HUGE undertaking this would be and that I really do not have time to do it right now. I thought that maybe I would get around to doing it, but I was not in any kind of hurry.

However, yesterday everything changed after I conversation I had with my youngest sister, Vivian.

Vivian is the mother to two beautiful children! She is blessed to be able to stay home with them full-time. Since having her baby girl in April, it has been Vivian's desire to lose her baby weight and get healthy. It has not been easy, but she is doing it with My Fitness Pal. She is tracking her calories each day to make sure that she does not go above the amount that her body needs.
Vivian's desire to lose weight and count calories is what pushed me over the edge to add additional nutritional facts to the recipes on my blog. I want my sister to be able to visit my blog and use my recipes as she is on her weight loss journey!

I'm so sorry that I did not realize how important this was sooner! I am so thankful that God's using my sister to teach me how to help the rest of you who are trying to lose weight and be healthy!

This process is going to take some time and with my new baby coming soon it might take longer, so please be patient with me. So far, I've only got nutritional facts for six of my most recent recipe reviews. I will continue to work on them and hopefully get done sooner than later. Below is a sample of what my recipes will look like with the added nutritional facts.

I am so excited about this change. However, as I said above, please be patient with me as I work on this project! I hope that this hardwork pays off and continues to help you all as you lose weight!!

Working From Home

This morning, things at work look a lot different for me. What am I talking about?

Well, recently I received approval to work from home! I am working from home part-time during the month of August, so that I can get adjusted to my new setup and schedule.

Today is my very first day to work from home!

This change is going to last even after I have given birth to Olivia! I am so excited about working from home and be able to take care of my newborn at the same time.

I am nervous that as I work from home, I will fall into old eating habits. I do not want to be snacking all the time just because I am working next to my kitchen. I also want to continue to stay active, so I need to figure out a new workout routine for myself. I'll blog more about all of this as it comes, but those are just a few of the many changes that I am facing in the coming months and weeks.

Please continue to pray that things go well as I make this tranistion.

If Only

We have all said it 100 times,
“If only I had ____ then I could lose weight.”

Maybe it was a personal trainer, a personal chef, or a calorie free chocolate cake. The reality check is that even if we had the things that we wished for, we would still find an excuse to not be able to reach our weight loss goals. If only thinking is counteractive, almost as if you are giving yourself a reason not to succeed.

Truth is there is no quick fix. No magic wand, no single answer. The good news is that we already have all of the resources that we need in order to be successful, but it takes us putting in the work and being willing utilize these resources!

So what do you have that’s going to help you?
Meetings- members who attend weekly weight watcher meetings lose 3X more weight than those that do not….tell ya something? In the meeting you get to rely off of other members who are going through the same things you are. Share recipes, ideas, what does/doesn’t work. Witness success stories taking place all around you. You will find the motivation and support that you need. You will also find the accountability that many of us need. Plus each week we discuss a different topic that will assist you to get to your long term goals.

Etools- recipes, success stories, recipe builder, tracking, community challenges- in one word etools is amazing! This can be a huge resource in helping reach your goals!

Friends/family- find a buddy or an accountability partner, someone to talk you our of eating that entire gallon of ice cream. Ask for help from family members and coworkers. These people can be a huge encouragement and help remind you that you can be successful!

Tracking- by tracking you are holding yourself accountable for what you are eating. This can really help you to stay on plan. Tracking activity can also be huge source of encouragement as well.

Planning- by planning we can change the outcome of our day. Take the time to think about the week ahead. Decide which days are going to be the most challenging and plan to spend more pointsplus values that day. Plan out your meals and put together a shopping list of what you will need. Also, plan out the activity you are going to complete

Weight Watchers materials- go back and read through your meet PointsPlus 2012 books and reread those pocket guides. Utilize your companion guides and remember to rely on your calculators. Even meeting room products like cookbooks, electronic food scales, easy measure spoons can help you along your journey. Maybe it is a matter of keeping yourself stocked on snacks.

Non Scale victories- these are all the small things that make you happy along your weight loss journey. Being able to walk up a flight of stairs without passing out, getting into a smaller dress size, realizing that that brownie wasn’t worth it, getting a compliment about how you look, finding new parts of your body you forgot you had….all of these are things that we should cherish “Warm and Fuzzies”. Rely on these when your confidence has fallen. Remember where you started and how far you have come since then.

No more excuses, we have what we need to succeed, now let’s put it to good use!

Love My Blogging Community

For the last six weeks, I have been participating in a summer Bible study at church. We have been working our way through a Bible study called, “Nehemiah: A Heart That Can Break” by, Kelly Minter. It is such an amazing study and God has been using it to show me what He has put on my heart to do by way of ministry. God is teaching me that, “Sometimes obedience simply means showing up” and being willing to do whatever God has asked me to do! If you are looking for a good study to do this fall, I would highly recommend that you check this one out.


Another theme throughout the book of Nehemiah that I have been learning about is the importance of community. I have learned that everyone has a vital part to play in the communities that they are involved in. It has been cool to watch God show me the different communities that I am apart of on a daily basis.

Hands down, one of my favorite communities is my blogging community!!

I am so thankful to be able to be a part of a community with all of you! When I began this blog I was doing it for myself, so that I could have a way to document my struggles with weight loss and maintenance. However, God has taken this blog and used it in ways that I never imagined! I enjoy reading your comments, emails, and interacting with you on Facebook and Twitter. I am thankful that many of you trust me enough to share your own weight loss stories and struggles with me. I want you to know that I do pray for you and will continue to do so as long as you need it.

Because we are all a part of the same community, I feel like I need to remind you of something:

My due date is in 25 days!!

I want you all to know that during this time that I am adjusting to being a new Mom, I will need to put blogging on hold. I do not know that I will stop blogging completely, but at first my posts will be few and far between. I would love to continue to hear from you through comments and email. Please keep in mind that I will not be able to respond to you very quickly, because I am at home busy with a newborn.

I am going to miss blogging so much!! Do not worry though, because I will be back!!

After Olivia is born, I will be on another weight loss journey of my own. I am thankful that I do not have to go on this journey by myself. I am so excited to be able to share my journey with all of you during the coming months!

Recipe Review: Soup or Sauce (S.O.S.) Mix

Today, I want to share with you another amazing recipe that I found on Pinterest!! I have seen this before, but I have never taken the time to calculate the pointsplus values for this recipe. I wish I had taken more of an interest in this recipe in the past, because it probably could have been saving me money for months.

I make a lot of recipes that require cream of chicken and/or cream of mushroom soup. I always use 98% Fat-Free Cream of Chicken soup, which is about 4 pointsplus for 1 can. I feel like I need to own stock in this product, because I purchase it so often!

I was excited to learn that the recipe below for this S.O.S. Mix is equal to 9 (10.5 oz) cans of cream soup and is only 3 pointsplus per serving!! This recipe is lower in pointsplus values than the 98% Fat-Free Cream of Chicken soup that I normally use. It is also homemade, so there are not any ingredients in this mixture that I did not put there myself.

The real test came when I used it in one of our favorite family recipes. I made Chicken and Rice with this S.O.S. mixture, instead of the cans of soup that I typically use, and it turned out great!! On top of all of that, with the SOS mixture one serving of Chicken and Rice was only 4 pointsplus per serving!

I am excited to continue to use this mixture!!


Combine all ingredients in a recloseable plastic bag or in a plastic container.

Shake all ingredients together until completely mixed.

This is your final product and it is equal to 9 (10.5 oz) cans of cream soup!

2 cups powdered non-fat dry milk
3/4 cup cornstarch
1/4 cup instant chicken bouillon (regular or low sodium)
2 Tbsp dried onion flakes
2 tsp Italian seasoning (optional)

Combine all ingredients in a recloseable plastic bag, mixing well. Equal to 9 (10.5 oz) cans of cream soup.

To substitute for 1 can of cream soup
Combine 1/3 cup of dry mix with 1 1/4 cups of cold water. Whisk until well blended. Cook and stir on stove top or in microwave until thickened. Add thickened mixture to casseroles as you would a can of soup.

Store in closed plastic bag or air-tight container until ready to use. It does not have to be refrigerated.
